“Absolutely French” Cooking Class. Chef Benoit Fliou is the chef and owner at Absolutely French, specializing in bringing authentic French cuisine to the tables of those passionate about fine French cooking. Training with some of the top chefs in France including Christian Parra, Dominique Mulon and Stephane Jego, Benoit has worked in highly rated restaurants in Paris, including L’ Ami Jean, Le Barbezingue, and L’ Adresse. A desire to share his skills led him to L’ Atelier des Sens where he taught French cooking classes to Parisians and tourists alike. After 20 years working in the birthplace of gastronomy, Benoit left France to start a new life in Chicago, with his wife. As seen on ABC News, Chef Benoit Fliou holds true to the techniques and recipes that make French cuisine so highly regarded in the world of gastronomy, while paying attention to every detail so your experience is “Absolutely French!”
The menu of the cooking class is as follows:
– pan seared salmon with spices garlic and fresh thyme
– homemade fettuccine
– lemon and capers beurre blanc
– dark chocolate ganache with raspberry jam
The class will be hands on. The participants will learn how to portion, season the fish and use the non stick pan. Participants will also learn the steps to make pasta dough, knead the pasta dough, cut the fettuccine shape and cook the pasta, while some participants will work on the progression of the sauce, as well as preparing the chocolate ganache.
