When I opened up my 4th grade science book and saw a photo of a shrimp swimming in the sea, I declared I would never eat shrimp again. Expecting this dramatic tweenage outburst to pass, my mom asked, "so will you never eat chicken again because it comes from chicken?" Before this moment, it had never occurred to me from where my food was coming. In 1993, a 9 year old vegetarian in Chicago was unheard of. Concerned, my mom took me to a nutritionist who stated that if I were to continue a vegetarian diet, I not only would be perfectly healthy, but I might end up being the healthiest person in my family! Intrigued, I began reading about food science which eventually lead to a vegetarian, gluten-free, dairy-free diet.
In the early 2000's I lived in Southern California for college and throughout my early professional career, and fresh and healthy produce was at my fingertips. It was there where I tried my first acai smoothie bowl...a convenient way for a busy girl on a complicated diet to grab a healthy, refreshing, hearty meal. They truly brightened my day!
